configs/linksprite_pcduino_defconfig: update Linux/U-Boot versions

Browse Source 
Bump Linux kernel to 5.16.1 and U-Boot to 2022.01. Select option
BR2_TARGET_UBOOT_NEEDS_OPENSSL since U-Boot requires openssl.
Drop redundant U-Boot options.
